Low Carb Guacamole Chicken Melt

The past week has been extremely busy and I'll be the first to admit that all I have eaten is KFC, Taco Bell, and McDonalds ðŸ¤®ðŸ¤®

I'm truly surprised that I didn't gain a lot of weight but I'm still down about five pounds. We went grocery shopping a few days ago so now there are no excuses. I'm back at it. Last night for dinner I made Guacamole Chicken Melts for the boys (who devoured and loved these). The full recipe is from That Low Carb Life HERE. We didn't have some ingredients so our version of this is below.

Ingredients for Chicken:
4 boneless chicken breasts
PAM spray
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon garlic powder

Ingredients for Avocado:
1.5 Avocado halves
1 teaspoon cumin
1 teaspoon salt
1/2 lime

Ingredients for assembling:
4 slices of bacon, fried crisp and chopped
1/2 cup grated pepper jack cheese


Directions:
Spray a skillet or pan and heat over medium heat. Season the chicken breast with cumin, paprika, and garlic powder. Add the chicken to the pan and cook for six minutes per side. If the chicken is thicker, cook 10-12 minutes per side or until it's cooked all the way through. Turn off the heat but leave the chicken in the pan. While the chicken is cooling down, prepare the avocado/guacamole. Add the 1.5 halves of avocado, cumin, salt, and lemon juice in a bowl and and mash together. Cook the bacon to a crisp and chop. Once you're done, spoon the avocado over each chicken breast and then spread chopped bacon on top followed by the pepper jack cheese. Turn the heat back on for two more minutes or until cheese is melted.



We served ours with corn on the cob that was made in the air fryer. We cooked it on 400 degrees for six minutes and then flipped and then put it back in for six more minutes.
