Healthier Buffalo Chicken Dip

Although this is a week late from Superbowl Sunday 2024, I did make this for Superbowl and it was enjoyed by my family! It was extremely easy to make and all ingredients were added to a crockpot. Now, to the recipe. I always try and make the recipes my own as well as add healthier alternatives if, and when, possible. For this one, the original recipe can be found HERE. We used chicken breast in the crockpot instead of canned chicken, 1/3 less fat cream cheese, lite cheddar cheese instead of Colby Jack cheese, half ranch seasoning mix & half lite ranch dressing, as well as Buffalo Sauce with Avocado Oil from Primal Kitchen. 

Ingredients:
2 large boneless, skinless chicken breasts
8oz 1/3 less fat cream cheese
4oz cheese (we used lite Colby jack, you can use any kind you prefer)
1/2 cup Primal Kitchen Buffalo Sauce with Avocado Oil
1/4 cup ranch seasoning mix
1/4 cup lite ranch dressing
Buns for sandwiches or chips for dipping

Directions: 
To a crockpot, add chicken, cream cheese, colby jack cheese, buffalo sauce, ranch seasoning and dressing and set on high for 4 hours. 


After 4 hours or so, shred the chicken (use two forks and shred right inside the crockpot). 


If the cream cheese is still thick, use a potato mashed to mash it up a little bit (it sounds weird, but it worked for me.) Let cook for another 30-60 minutes. 


Add to bread to make a sandwich or use chips and dip right into it! Enjoy!
