Chicken with Broccoli and Rice - General Tso's Homemade Chicken

I will admit that the last 3-4 nights I have not been eating super healthy (biscuits and gravy, general tso's chicken, etc) but this recipe is one that boyfriend picked out and after the first bite, OMG. We bought chicken breasts at Smart and Final and we had four chicken breasts for $8. I could have used one chicken breast in this recipe as that what it calls for, but I used two so I ended up doubling the recipe, or making two batches. Both turned out amazing. We also added broccoli and Jasmine Rice. The original recipe was found HERE but we made ours different enough since I didn't have some of the items. This chicken is legit and, although it took awhile to make, it was. SO. GOOD. And very unhealthy, I know. It's hard to balance healthy eating with non-healthy eating but everything homemade is better.

Ingredients for the Chicken:
-2 pounds boneless chicken thighs, cut into 3/4 inch pieces
-1 large egg white, beaten until frothy
-2 tsp soy sauce
-1 tbsp white cooking wine
-salt

Ingredients for the Coating:
-1/2 cup cornstarch
-1/2 cup flour (I did 1/2 cup almond flour in one batch and 1/2 cup quinoa flour in the second)
-1/2 tsp baking powder

Ingredients for the Sauce:
-3 tbsp soy sauce
-1 tbsp cornstarch
-3 tbsp white cooking wine
-3 tbsp sugar
-4 tsp white vinegar
-1/3 cup chicken broth
-1 tbsp minced garlic
-2 tbsp vegetable oil

Steamed broccoli and rice for serving

Directions for the Chicken:
Combine chicken, egg white, soy sauce, wine and 1/2 tsp salt in a bowl.


Directions for the Coating:
Whisk together cornstarch, flour, baking powder, and 1/4 tsp salt in another bowl. Let stand while making the sauce.



Directions for the Sauce:
Whisk soy sauce into the cornstarch. Then whisk in wine, sugar, vinegar, and broth.

Directions for Frying Chicken:
Heat vegetable oil in a frying pan, a few inches deep. Working in batches, remove chicken from marinade (don't remove excess liquid), toss in coating and carefully add to oil and cook until crisp. The original recipe said 2-2 1/2 minutes. For me, it was more like 10-15 minutes, so just keep an eye on it and turn over when brown and fried.


Directions for Cooking the Chicken in Sauce:
Heat 2 tbsp of vegetable oil in a pan over medium heat. Add minced garlic and cook for about 1-2 minutes. Add the sauce mixture and bring to a boil. Add in chicken and toss to coat in sauce. Sauce will thicken after a few minutes so cook until chicken has absorbed the sauce.


While that is cooking, cook rice and broccoli. You can combine broccoli, rice, and chicken or separate them on the plate. I literally took one bite of the chicken and thought it was amazing so I hope you love it as much as I do!
