Healthier Swedish Meatballs

Is anyone else so excited that Monday is a holiday? I love what I do but it is nice to have a little break and, every once in awhile, a 3-day weekend. I have two blogs to catch up on and hopefully I'll be able to get both completed this weekend.

On a happier note, it is Valentine's Day so I hope everyone has an amazing and special Valentine's Day! Kevin and I went to the casino last week so that was our early Valentine's time together. We may take Jace to go see the new Sonic movie - he has been talking about this movie for months! What are your Valentine's Day plans?

A few nights ago I made delicious healthier Swedish Meatballs. I used Ground Turkey and Ground Beef as well as seasonings, egg, and breadcrumbs. I didn't have the noodles that you normally use so I just made Shells and it worked perfectly. The sauce was beef broth and cream cheese and who knew that combining those together would make an amazing and delicious sauce!

Ingredients:
2 Tbsp olive oil
1 Tbsp onion powder
1 Tbsp garlic powder
1/2 pound ground turkey
1/2 pound ground beef
1 large egg
1/4 cup breadcrumbs
1/2 tsp salt
1/8 tsp pepper
1/2 tsp allspice
2 cups beef broth
3oz cream cheese
basil, as needed


Directions:
In a skillet, heat olive oil, onion powder, and garlic powder on medium heat for 2-3 minutes. Set aside to cool. In a large bowl, combine turkey, beef, egg, breadcrumbs, onion mixture, salt, pepper, and allspice. Mix well and form into 16 meatballs.


Add beef broth to the same pan and bring to a boil. Reduce heat to medium and drop the meatballs into the broth.


Cover and cook about 20 minutes. While this is cooking, find your choice of pasta and follow cooking directions on package.

Remove the meatballs with a slotted spoon and set aside on a plate. Pour the broth in a blender along with the 3oz of cream cheese and blend until smooth. Return to the skillet and wrap meatballs in sauce. Simmer for about 5-10 minutes and serve with pasta. Add basil seasoning on top and enjoy!



Holy moly, this sauce was so good. I would recommend though if you want more sauce to maybe double the broth and cream cheese in the blender. There is barely enough to cover all of the meatballs. Tastes amazing at the first bite though!
