Low-Carb Lasagna

NBA All-Star weekend has always been one of my favorite weekends. It consists of a Celebrity basketball game, All-Star game, 3-point shootout, skills challenge and more. I decided to write this blog and hopefully complete it before the 3-point shootout. It's so fun to see how players in the NBA make 3-point shots within 60 seconds. I'm also looking forward to the All-Star game tomorrow because both Donovan Mitchell and Rudy Gobert (Utah Jazz) will be playing!

What is your favorite part of All-Star weekend?

Anyways, to the recipe - earlier last week I made this delicious Low Carb Lasagna and it was a huge hit. Plenty of leftovers and a delicious, healthy, low-carb meal.

Ingredients:
1 1/2 pounds cooked and shredded chicken breast
3/4 cup sour cream
1 cup medium salsa
2 tbsp chili powder
2 tsp ground cumin
1 tsp onion powder
1 tsp garlic powder
PAM spray
4 flour tortillas
2 cups shredded cheese


Directions:
Combine chicken, sour cream, salsa, chili powder, cumin, garlic powder and onion powder.




Grease a baking pan with PAM spray. Place half of the chicken mixture in the baking pan and layer two tortillas on top. Sprinkle with half of the cheese and repeat layers. 


Bake at 425 degrees for 15 minutes until cheese is brown. Enjoy!
