Easy Baked Taco Casserole

I really don't know how I continuously fall behind on blogs. I guess it just seems like I'm constantly busy with new and different opportunities. One thing has stayed the same - and that's the fact that I still cook almost every night.

Kevin and I had an early Valentine's Day celebration and went to the casino Saturday night. I came home with $400 after only spending $280 so that's not bad. Most of the time I win and then lose all my money. We found a machine that kept paying out for maybe 30 minutes straight. I think we got up to about $850 and then I went down to $500 and then spent some more. Proud of myself for actually coming home with money.

On that positive note, I won $50 about a week ago doing a giveaway, a $25 Nike gift card from a giveaway and I'm still waiting on a $100 Gymboree card that I won a few months ago that said I should receive it in February. It's been a good month so far!

With some of my winnings I was able to do a nice grocery shop at Grocery Outlet yesterday and made this taco casserole. It was super easy, I liked it (I had seconds for lunch today) but Jace didn't - he doesn't like tomatoes so that's not a surprise. The original recipe was from Southern Living HERE. We made it our own below - Jace helped. He loves helping me cook and I love that he loves to help me cook and also he loves trying new foods. If you make this recipe, let me know if you like it!

Ingredients:
- 1 Tbsp olive oil
- 1.5 pounds ground beef
- 1 Tbsp onion powder
- 15oz can diced tomatoes
- 15oz pinto beans, drained and rinsed
- 1 package taco seasoning
- 8 corn tortillas
- 9oz cheddar cheese, shredded
- 1 cup shredded lettuce
- 1/2 cup salsa
- 2 Tbsp sour cream



Directions:
Preheat oven to 400 degrees. Heat olive oil in a cast-iron skillet on high. Add beef and stir often until brown, about six minutes. Add onion powder to skillet. Add tomatoes, beans, taco seasoning, 1/2 cup water and stir to combine.


Bring to a boil, reduce heat to medium, simmer, stirring often for about 3 minutes and remove from heat.


Heat tortillas in a frying pan over high heat for about 15 seconds per side. Transfer to a plate. Place 4 tortillas in a square baking dish. Top with half of the meat mixture, 1/2 the bag of cheese and repeat this layer one more time. Bake in preheated oven for about 8 minutes. Once removed, top with shredded lettuce, salsa, and sour cream. Tastes amazing by itself.
