Baked Chicken Parmesan

Last night, alongside the Garlic Butter Rolls, I made this baked Parmesan Chicken. I've made a lot of Parmesan Chicken recipes in my life (see below) but this one was probably one of the best ones I have made. It seems like with baked chicken I either cook it too long or not as much as I should but I was able to find the perfect time for this one (different than the original recipe). The original recipe was from Yummly HERE.

Ingredients:
- 2 large boneless skinless chicken breasts, cut in half, horizontally
- 1 1/4 tsp salt (1 tsp for chicken and 1/4 tsp for breading)
- 1/2 tsp pepper
- 1/3 cup flour
- 1 egg
- 1/2 cup panko breadcrumbs
- 1/2 cup shaved Parmesan Cheese
- PAM or cooking spray
- 12oz marinara sauce



Directions:
Preheat oven to 375 degrees. Spray a cookie sheet with PAM or cooking spray and set aside. Cut chicken in half and season both sides with salt and pepper.


Get three medium bowls - place flour in one, beat the egg in one, and in the 3rd one, combine Panko, parmesan cheese and salt.


Coat one piece of chicken in flour, dip in egg and then Parmesan mixture. Do this for all four pieces and place on the cookie sheet. Spray pieces with cooking spray on top and bake for 20 minutes. 


Flip the chicken over, spray again with cooking spray, and bake for 10 more minutes. 


Spoon marinara sauce evenly over chicken and add mozzarella cheese on top. I cooked for 12 minutes longer but check after 5 minutes. 


Serve with Garlic Rolls or any other side.
