Red + Blue Vodka Jello Cups for 4th of July

I decided a few days ago that I wanted to make these Jello Shots for the 4th of July. Can you believe that I've never had jello shots? I searched high and low for 2oz "shot" containers and couldn't find any that would deliver last second or be here by the 4th so I just made them in plastic cups and used a spoon to eat the jello. Pretty good, Kevin and I both decided that we liked the blue jello the best. The original recipe can be found here. The only thing I would recommend is letting the first layer sit longer than an hour. We also couldn't find white gelatin, just pink, but because the blue didn't sit, the pink and blue basically combined together. We also didn't have lemon extract so we just eliminated that altogether. Still good and plenty leftover! Hope you all had a wonderful 4th! Also, you really don't need an excuse to have these ;)

Ingredients:

Blue layer -
3oz box of blue jello (we got the blue raspberry Sonic brand kind and it was SO good!)
1 cup boiling water
1/2 cup vodka
1/2 cup cold water

White/pink layer -
1 Tbsp gelatin powder
1/2 cup cold water
1/2 cup boiling water
1/2 cup vodka
1/3 cup sweetened condensed milk

Red layer -
3oz cherry or strawberry jello
1 cup boiling water
1/2 cup cold water
1/2 cup vodka



Directions:
Follow the preparation instructions for the blue jello on the back of the box. When it is time to add the cold water, add 1/2 cup cold and 1/2 cup vodka. I used four plastic cups and took the mixture and divided it evenly into the four cups, this is the first layer.


Let set for 1-2 hours to set. The original recipe said one hour but it wasn't all the way set so our two layers got combined. I would for sure recommend at least two hours. It should not be liquidy.


You can now put together the white (or in our case pink) layer. Place gelatin in  mixing bowl and add cold water. Allow the gelatin to sit for 2-3 minutes. Stir in boiling water, vodka and condensed milk. Pour the mixture and divide it on top of the blue layer in all four cups. Place in fridge for 1 hour to set.

For the red layer, follow the preparation instructions for the jello on the back of the box. When it is time to add the water, add 1/2 cup cold water and 1/2 cup vodka. Fill the four cups evenly as the last layer. Store in fridge overnight and enjoy in the morning!
