Keto Garlic Butter Rolls

Let me start off by saying that if you want to make Keto Garlic Butter Rolls, you want to use 1.5 cups of Almond Flour, not regular flour like my recipe calls for. I went to the market looking for Almond Flour and it was $10! I couldn't get myself to purchase it or I would have made them all the way Keto and swapped out the regular flour.

The original recipe was from Eat Well 101 and I made quite a few changes from the original recipe. Besides the flour, I used less eggs, shaved parmesan instead of grated, and added different ingredients in the garlic butter sauce. If you make these, let me know if you love them as much as I did!

Ingredients:
- 2.5 cups of shredded mozzarella cheese
- 2oz cream cheese
- 2 eggs (if you use Almond Flour, you will want to add one more egg)
- 1 cup flour (if you want them to be fully Keto, use 1.5 cups of Almond Flour instead)
- 1 tsp baking powder
- 1/3 cup bacon bits
- 1/2 cup shaved Parmesan cheese
- 1 tsp Italian seasoning
- 1/4 cup butter
- 1/2 tsp oregano seasoning
- 1 tsp minced garlic
- 1 tsp thyme seasoning



Directions:
Spray a cast iron skillet with PAM or cooking spray and set aside. On a small plate, mix together the shaved Parmesan cheese and Italian seasoning.



In a small bowl, melt the mozzarella cheese and cream cheese in a microwave for one minute and mix well with a spatula until smooth.


Add to the cheeses - eggs, baking powder, flour, and bacon.


Mix with a spatula and then use your hands and form 6 dough balls. Roll each dough ball in the Parmesan and Italian seasoning mix until covered and place in skillet. Sprinkle the remainder mixture over the dough balls.


Place the skillet in the refrigerator for 10 minutes and preheat your oven to 400 degrees.


Remove the skillet from the refrigerator and bake the bread for 25 minutes.


With about 5 minutes left to cook, start making the butter. Place the 1/4 cup butter in a small saucepan on medium heat and let melt. Stir often. Once it's almost melted, add the oregano, minced garlic and thyme. Stir until melted completely.


When the rolls are done cooking, use a spatula and pour the butter sauce over the rolls. Let sit for a few minutes and enjoy with Chicken Parmesan or any meal that you prefer. You can always eat them as a snack - they are that good! :)
