Cast-Iron Skillet Taco Macaroni and Cheese

Our county is still on the "purple" list which is the watchlist here in California so we still don't have a lot of places open to go to :( Such a weird and crazy year, right? It's been one of the most stressful years of my life to be honest but cooking almost every night has made things so much easier and better for me. This is also my 3rd week of doing an at-home HIIT workout twice a week which makes me feel so much better too. I need some more ideas for my mental health and sanity. Anyways, last night I made this Cast-Iron Skillet Taco Macaroni and Cheese from Tasty and it was tasty (no pun intended). It's a one-pot meal which makes things super easy and it only took 30 minutes to make from start to finish. We changed up a few things including: replacing onion with onion powder, garlic with garlic powder, beef broth with chicken broth, and we used the canned diced tomatoes instead of dicing a tomato.

Ingredients:
Olive oil
1 lb ground beef
1 tbsp onion powder
1 tbsp garlic powder
2 tbsp taco seasoning
1/2 lb (8oz) macaroni noodles, dry
1 cup water
2 cups chicken broth
2 cups cheddar cheese
1 cup diced tomato 



Directions:
In a cast-iron skillet, heat about 1-2 tbsp olive oil over medium heat. Add onion powder and garlic powder and stir. Add the ground beef and 1 tbsp of the taco seasoning. Break down the beef and stir until cooked.


Use a paper towel to drain the excess liquid from the skillet. Add the water, chicken broth, pasta, tomatoes, and 1 tbsp of taco seasoning to the pan and stir.


Cook on low heat for 15 minutes, stirring several times to keep the pasta from sticking to the bottom of the pan. Increase heat to medium after 15 minutes and stir pasta until the most of the liquid is gone. Turn off the heat, add all of the cheese and stir until cheese is melted. Super easy to make! Serve with garlic bread or toast if you would like. Enjoy!
