Skillet Turkey Enchilada Meatballs

Happy Halloween! I hope everyone has a fun and safe Halloween. I wanted to share a recipe while I had some time. Last night I made these Turkey Enchilada Meatballs on a cast-iron skillet. I had mine with some toast and Kevin had his with spaghetti noodles. I removed three of the ingredients and changed three of the ingredients. The original recipe comes from Recipe Runner

Ingredients:
1 pound ground turkey
2 tbsp onion powder
1/4 cup panko breadcrumbs
1 egg
2 tbsp chopped cilantro
1/2 tsp chili powder
Salt and pepper to taste
2 cups enchilada sauce
1/2 cup shredded Garlic Jack cheese
1/4 cup shredded sharp cheddar cheese



Directions:
Preheat oven to broil. In a large bowl, whisk together the onion powder, panko, egg, cilantro, chili powder, salt, and pepper. 

Add in the ground turkey and use your hands to combine everything together. Heat a 12 inch cast iron skillet over medium-high heat. Coat with cooking spray or vegetable oil. Use your hands or a cookie scoop to form tablespoon sized meatballs and place in the skillet. 

Cook for 3-4 minutes on one side, flip over and cook for 3-4 more minutes. Lower the heat to medium-low then pour the enchilada sauce over the meatballs. 


Sprinkle the cheese on top and place in the oven to broil for about 3-5 minutes. Serve with toast or spaghetti noodles.
