Cast Iron Filet Mignon

This super easy Filet Mignon takes about 20 minutes in the cast iron skillet. The original recipe can be found HERE and we cooked ours until it was well-done but adjust as needed based on your preference. 

Ingredients:
2 beef tenderloin fillets
salt and pepper to taste
4 tbsp butter
2 tbsp olive oil


Directions:
Sprinkle fillets with salt and pepper. Melt half of the butter and olive oil in a cast-iron skillet over medium heat. Cook 5-7 minutes per side, add butter on top of the fillets and cook for 1-2 minutes more, or until your level of doneness. 

Serve with salad, green beans and rice.
