Broccoli Chicken casserole

I meant to make this blog yesterday but I spent all day making glitter tumblers. For those who don't know, I have been making and selling glitter tumblers since the end of February of this year. I spend a lot of time on them and love doing them. If you are interested in more information, here is some information:

Anyways, back to the recipe. I'm currently watching the NBA playoffs - game 7 of Clippers/Mavs to see who MY* Utah Jazz end up playing second round. I am super comfortable with a comfy blanket and my laptop in my lap. What a great Sunday! This recipe was made I think Thursday or Friday night and it was really, really good. Kevin added more cheese like he always does but I liked it the way it was. I didn't realize it was a Keto recipe until after I printed the recipe out. The original recipe can be found HERE. We changed a few things including not adding parmesan cheese, using garlic powder instead of minced garlic, and we stir fried the chicken to prepare it. Super easy and delicious. We also didn't broil the the food and just let it sit on the stove longer. Full directions below! 

Ingredients:
1/4 cup butter
12 oz broccoli
2 tbsp garlic powder
1 cup heavy whipping cream
2 cups mozzarella cheese, shredded
salt and pepper to taste
1 1/2 large chicken breast, chopped and stir fried (use olive oil in a wok and let sit until hot. Put chopped chicken in the wok for about 5-7 minutes on each side, until almost fully cooked)

Directions:
Once you make chicken or during the process of making the chicken, set a skillet on the stove on medium heat and add 2 tbsp butter in the pan. Once melted, add the broccoli and saute until tender, about 4-5 minutes. 

Remove the broccoli to a bowl. Melt the remaining butter and add the garlic powder and heavy whipping cream. Bring to a simmer and cook about 3-5 minutes. Stir in 1/2 cup mozzarella cheese until melted. 

Season with salt and pepper to taste. Stir in the broccoli and chicken and top with the rest of the mozzarella cheese. Let sit and melt for 2-3 minutes. Enjoy!
