Easy Beef and Broccoli

Last night's dinner was Beef and Broccoli - a little bit on the healthier side compared to some of the other meals we have had. I'm starting to make better meal choices for Kevin and I both. Tonight we are making Taco Soup and then tomorrow we will make a spaghetti with ground turkey. Sometimes it's just the littlest and smallest changes that make the biggest impact. I didn't take a lot of photos of this meal because I took video instead to make an Instagram Reel which you can see HERE. Jace helped make it and he loves helping with dinner! We used Olive Oil instead of Vegetable Oil, used half the broccoli the recipe asked for, didn't use any chili garlic sauce, and used onion powder instead of onions. Ingredients:
5 tbsp olive oil
1 lb beef sirloin steak, cut into thin slices
2 cups broccoli
2 tbsp onion powder
1 cup beef broth
2 tbsp brown sugar
1 tsp ground ginger
2 tbsp soy sauce
2 tbsp cornstarch
2 cups white rice

Directions:
In a skillet or pan, heat 3 tbsp of the olive over medium-high heat. Cook beef 3 minutes per side or until cooked through all the way. Move to a plate. Add remaining olive oil to skillet, add broccoli and onion powder, turn heat to medium and cook about 4 minutes. Add beef broth, brown sugar and ginger and heat to simmering. In a small bowl, whisk soy sauce and cornstarch. Add beef back to the skillet and pour the soy sauce and cornstarch sauce over the mixture. Return to simmer and cook a few more minutes. Serve over white rice.
