Baked Chicken Cordon Bleu

Last night we made Chicken Cordon Bleu with the delicious dijon mustard sauce. I was full only eating half of one but was impressed with how they turned out. This recipe called for a lot of ingredients and took a little bit longer than I thought it would to make but I enjoyed it. I actually shortened this recipe HERE because it seemed way too long to me. The shortened version is below.




Ingredients:
3 boneless, skinless chicken breast
salt
pepper
1 tablespoon garlic powder
1 tablespoon onion powder
9 slices of Mozzarella Cheese slices
6 slices of ham, thinly sliced
1 cup flour
4 eggs, beaten
2 cups breadcrumbs

Ingredients for the Dijon Sauce:
3 tablespoons butter
garlic powder
3 tablespoons flour
2 cups milk
1/4 cup dijon mustard
1 cup mozzarella cheese, shredded
salt
pepper

Directions:
Lay out three pieces of chicken breast on a cutting board. Sprinkle them with salt, pepper, garlic powder, and onion powder. Slice the chicken breast almost all the way through, horizontally. Place two slices of mozzarella cheese slices, followed by the ham, and one more cheese slice in the chicken. Prepare and separate three bowls, one with flour, one with egg, one with breadcrumbs. Dredge the chicken in flour, egg, then breadcrumbs and place the cordon bleu on a baking sheet or pan. Cook the chicken on 400 degrees for 30 minutes. After 30 minutes, I checked the chicken and it was still not cooked all the way through so I cooked it for 20 more minutes.


Directions for the Sauce:
In a saucepan over medium heat, melt the butter, add the garlic powder and whisk. Add the flour and whisk for one minute. Add the milk and whisk until fully combined and no lumps remain. Turn the heat to medium/high and continue whisking until mixture comes to a simmer. Add the mustard, mozzarella cheese, salt, and pepper. Remove the pan from the heat. Slice the chicken and service drizzled with Dijon sauce.
