Irish Nachos in the Oven + Skillet

I had some extra potatoes and saw this recipe the other day for Irish Nachos. They are pretty much Nachos with potatoes instead of chips and they are so good. I had three servings and Jace who is 8 even had some :) The link takes you to a video HERE but I have the recipe written out below. I also cooked the potatoes like the recipe said to -40 minutes- and the potatoes got burnt so I did them a second time for 35 minutes and they were perfectly crispy. I'm sure oven temperatures vary so I would say to check after 30-35 minutes and keep them in there up to 40.


Ingredients:
5 potatoes, sliced into circles
3 pieces of thick bacon
Olive Oil
basil
oregano
1-2 cups of colby jack cheese

Additional options: Sour cream, chives, tomatoes

Directions:
Preheat oven to 450 degrees. Slice potatoes into circles. Place in a bowl of water and let soak. Place bacon in a pan and cook. Once done cooking, cut into pieces. Move potatoes from the bowl of water to a sheet pan. Drizzle olive oil over potatoes followed by basil and oregano. Cook in oven for 35 minutes.



Move potatoes to a cast-iron skillet. Pour colby jack cheese over potato slices and put in oven (still 450 degrees) for 3-4 minutes or until cheese has melted. Add bacon on top and move to a plate. Follow with sour cream and other seasonings. Enjoy!
