Four Sisters Cheesy Lasagna

Last week I spent the entire week with my sisters, nieces, nephew, and cousins. It was so much fun! We went to the beach, went and got ice cream, played Yahtzee and tennis. We had a BBQ for my Nana's 80th birthday and made this Lasagna a few days before. This original recipe was from Betty Crocker. I renamed it Four Sisters because it took four of us, sisters, to make it ;)

We made this recipe a little bit different. Originally we weren't going to add Cottage Cheese but I got outvoted so we did end up using it. We eliminated the Basil Pesto and replaced the chopped Onion with Onion Powder. We also used two different types of Tomato Sauce and two bags of mozzarella cheese instead of one bag.

Enjoy!

Ingredients:
- 12 uncooked lasagna noodles
- 1 container cottage cheese (15oz)
- 1 container ricotta cheese (15oz)
-2 eggs
-1 tsp salt
-2 bags shredded mozzarella cheese (10oz)
-1.5 pound ground beef
-1 Tbsp onion powder
-2 jars of your choice of pasta sauce

Directions:
Heat oven to 375 degrees. Spray a baking dish. Follow the directions on the package to make the lasagna. We cooked ours for 10 minutes. While the lasagna is cooking, mix in a medium bowl cottage cheese, ricotta cheese, eggs, and salt. Stir in one cup of the mozzarella cheese and set aside. In a skillet, cook beef and onion powder for 7 minutes or until beef is cooked. Stir in both cans of pasta sauce. In the baking dish, spread one cup of the beef mixture, top with 3 noodles and 2 1/2 cups of the cheese mixture. Top with 3 more noodles, 2 cups of beef mixture and 3 more noodles. Top with remaining cheese mixture, 3 noodles and remaining beef mixture. Sprinkle with remaining mozzarella cheese.

Cover with aluminum foil and bake for 40-45 minutes. Uncover and bake for 15 minutes or until cheese is browned. Let stand before cooking.

I didn't take a lot of photos because I didn't realize it would be as good as it was and that I would end up turning it into a blog. But it was delicious and everyone enjoyed it - including my sister who isn't a huge fan of Lasagna. My Nana had seconds. Comment below if you had this one and let us know if you like it!
