Belgian waffles

Last night we decided to go for a sweeter meal and made Belgian Waffles for dinner. I actually misread the directions so mine are a little bit different but they still turned out perfect. This recipe is from Davita and can be found HERE. We used regular flour instead of cake flour and regular butter instead of unsalted butter. We replaced the granulated sugar with monkfruit.

Ingredients:
2 large eggs
2 cups flour
3/4 tsp baking soda
3/4 cup sour cream
3/4 cup milk
2 tsp vanilla extract
4 tbsp butter
2 tbsp monkfruit
powdered sugar, raspberries and sugar-free syrup to go on top

Directions:
Heat a waffle iron. In a mixing bowl, mix together the flour and baking soda and set aside. Whisk together the eggs, sour cream, milk and vanilla. Melt the butter and add it to the egg mixture. Add the monkfruit to the egg mixture. Whisk the sour cream mixture into the flour mixture until just combined. Do not overmix. Spray the waffle iron with PAM or cooking spray. Add 1/2 cup of the batter to the waffle iron. Close and cook for 3 minutes. Serve with powdered sugar, raspberries, and sugar free syrup.
