Slow cooker Rotisserie Chicken Chili

A few nights ago I decided to make this Chicken Chili but using Rotisserie Chicken and I had to brag a little and say that this was probably the best chili I have ever made. It has chili powder so it contains a little kick but it's not so hot that it's unbearable. This recipe was from the one and only Davita. The original recipe used some stuff that we didnt - celery, garlic cloves, green pepper, chicken breast, onion, white rice and mexican oregano. The original recipe can be found HERE

Ingredients- 1 tbsp vegetable oil, 1 tbsp onion powder, 1 tbsp garlic powder, 1 cup carrots, 1 cup Rotisserie chicken, 14oz chicken broth, 1 cup diced tomatoes, 1 cup kidney beans, 3/4 cup salsa, 3 tbsp chili powder, 1 tsp oregano, 1/2 cup shredded cheddar cheese, 1/2 cup sour cream

Directions- Add everything except the rotisserie chicken, sour cream and cheddar cheese in a crockpot. Set on high for 3-4 hours. Add the rotisserie chicken and cook for 45 minutes more. Top with cheese, sour cream and use saltine crackers to dip. If you are wanting a no-salt choice, skip the saltines and crackers altogether.
