Cheesy Meatball Bake with Pasta

For those who don't know, we are staying with Kevin's Mom until June 10th and then we are moving into the house with the lake views that we wanted in Bradley! We are so excited to move! In the meantime, we have been switching off with making dinner between Kevin's Mom and I and even Kevin! In fact, he is the one who made this meatball recipe. He is such an amazing cook and loves meatballs so I had him make this Cheesy Meatball Bake recipe from Tasty!

As always, we tend to either not-include certain ingredients or we don't have ingredients handy. Instead of using 1 lb ground beef and 1 lb hot italian sausage we only used the ground beef. We also didn't have breadcrumbs so replaced those with Saltines. And instead of garlic we used

Ingredients - this made about 16 meatballs:
1 lb ground beef
1/2 cup parmesan cheese
1 tsp salt
1 tbsp Goyo Adobo seasoning
1 tbsp Mrs. Dash seasoning
1/2 tsp pepper
1 cup Saltine Crackers, crumbled
2 eggs
1 cup milk
1 tbsp olive oil
1 cup parmesan cheese (1/2 to mix with meatballs and 1/2 to top meatballs)
24oz marinara sauce
2 cups mozzarella cheese



Directions:
In a mixing bowl, combine the ground beef, parmesan cheese, salt, adobo seasoning, mrs dash seasoning, pepper, saltine crackers, eggs, and milk. Mix until everything is incorporated together. Roll into meatballs - it makes about 16.


Preheat oven to 425 degrees. Over medium heat, add 1 tbsp olive oil and brown the meatballs on both sides - about 2-3 minutes. 


In a casserole dish, spread a few tablespoons of marinara sauce to the bottom of the pan and place the meatballs in the casserole dish and add the remaining jar of marinara sauce. Top with mozzarella and parmesan cheese. We did not have aluminum foil so we covered with another baking tray and baked for 25 minutes. We served with pasta and a side of ground beef with more marinara sauce.
