Pumpkin Cheesecake Bars

Compared to dinner last night, this recipe was extremely complicated. I'm sure part of it was because we are moving so we have dishes (both clean and dirty) everywhere which leaves no room to bake and no large bowls to actually mix in. Yes, I ended up using a pan to mix in ðŸ¤¦ðŸ¤¦ But we are moving in 4 days so that's my excuse. Anyways, like almost all of my recipes, I was missing maybe three ingredients so I did make several substitutions.

These bars tasted just like pumpkin pie without the crust. They are from Wholesome Yum which is one of my favorite recipe books/Keto authors. These bars are healthy but because I made some substitutions, probably not as healthy as the original recipe :) Enjoy!

Ingredients:
1 cup Pumpkin puree
1/4 cup vegetable oil (substituted for coconut oil)
2oz cream cheese
2 large egg
1 tsp vanilla extract
1/4 cup coconut flour (replaced 1 cup almond flour)
2/3 cup sugar (replaced by Monkfruit)
1 cup buttermilk + 1/2 tsp baking soda (replace baking powder)
1 tsp Pumpkin pie spice
1/2 tsp salt

Ingredients for the frosting:
6oz cream cheese
1/2 cup powdered sugar (I didn't have erythritol)
1 tsp vanilla
1 Tbsp heavy cream



Directions:
Preheat oven to 350 degrees. Spray a baking pan with PAM or any spray. Using a bowl in the microwave, melt together the cream cheese and vegetable oil, until you can stir them together. It took about three 20-second rounds for it to seem like it mixed together.

In a large bowl, combine the pumpkin puree, melted vegetable oil/cream cheese mixture, eggs, and vanilla. Using a hand mixer, mix at medium speed until smooth.

In another bowl mix together the coconut flour, sugar, pumpkin pie spice and salt. In a small bowl, mix together the 1 cup buttermilk and 1/2 tsp baking soda and mix together. Add to the bowl with the flour. Add this bowl to the large bowl and slowly mix with the hand mixer at low speed until just combined.

Transfer the batter to the pan.



Bake for 25-30 minutes.


While it's baking, mix together the frosting. Use a hand mixer and beat together the cream cheese, powdered sugar, vanilla and heavy cream. I didn't let the bars cool before adding the frosting which is why it looks so terrible haha. Usually you will want to wait until the bars are cool, add the frosting on top and then eat or refrigerate. Mine have been refrigerated about 24 hours and tasted good last night and today once refrigerated. Feel free to add Nutmeg and Cinnamon on top once done.
