Three Cheese Macaroni and Cheese

Warning **You will not just eat one serving of this!!!**

You guys will be getting two recipes today because I made two delicious recipes last night - Baked Three Cheese Macaroni and Cheese and Banana Bread! This one will be the macaroni. Like always, we added bacon on top because bacon makes everything better. And since the last post, I didn't purchase flour so I used cornstarch instead - YES cornstarch and it worked just as good! The original recipe was from Better Homes and Gardens HERE.

Ingredients:
PAM spray
1 box penne
3 Tbsp butter
3 Tbsp cornstarch
2 cups milk
1 Tbsp onion powder
2 tsp ground mustard
1/4 tsp salt
Pinch of cayenne pepper
2 cups shredded swiss cheese
1 cups shredded cheddar/taco cheese mixture
1 cup shredded Gouda cheese
6 slices of bacon - cooked and diced


Directions:
Preheat oven to 350 degrees. Cook penne according to package directions and drain. While that is cooking, in a medium saucepan, melt butter over medium heat and sprinkle in cornstarch, whisking constantly for 1 minute. Whisk in milk, onion powder, ground mustard, salt, and cayenne pepper. Bring to a simmer over medium heat. Reduce the heat and cook, whisking constantly for 3 minutes and remove from heat.


In a large bowl, mix together the cheeses. I had Gouda and Swiss cheese as blocks so I manually shredded those.


Whisk half of the cheese into the milk mixture until smooth. Stir cheese sauce into pasta. Spoon half the pasta into the baking dish (spray with PAM). Add remaining cheese on top. Bake for 20 minutes. After 15 minutes, take out and add bacon on top. Cook for the rest of the 5 minutes and then broil for 4 minutes.





Try to eat one serving of this! SO SO good!!
