Cast-Iron Skillet Steak Bites with Potatoes

So unfortunately no move update but definitely some positive changes and we are headed in a positive direction. We went and saw this mobile home on 62 acres of property by Lake Nacimiento yesterday. The couple that owns it has a home by it and wow, the views from their backyard are priceless. We applied last night and Kevin and I went on a short walk and talked and figured, ya know, if this is the place for us, maybe this is what we need - just a home that feels like you are in the countryside (the owners have sheep and chickens!) and the mobile home has a wrap-around porch with their own amazing views. It's a little bit more money but to just sit outside, drink a glass of wine and just look out at the lake, that removes so much stress in itself. So fingers crossed! We really liked it and got along well with the owners. We wouldn't move in until June 8th though if that's the case. I'll keep you updated! Million dollar views for sure. We also applied and did a background check for an apartment in Atascadero that I looked at on Friday. I loved it but I for sure like this one above more! 

Anyways, I did one last Instacart order yesterday for the week so I am prepared to cook all week. After this week, I'm not sure what the plan is so there may be a pause in blogs - hopefully not but we will see! Last night I made these steak bites and potatoes in the cast-iron skillet - everything tastes better in the cast-iron! The original recipe was from Diet Hood HERE and below is our version. I used about a 2.5 pound flank steak so I added more soy sauce and olive oil and eliminated the hot sauce. Enjoy!

Ingredients for the Steak and Marinade:
2.5 pounds flank steak, cut into cubes
1/2 cup soy sauce
2 Tbsp olive oil

Ingredients for the Potatoes:
10 small potatoes, washed, dried and quartered
3-5 Tbsp butter
1 Tbsp olive oil
1/2 Tbsp minced garlic
1 Tbsp dried italian seasoning
Salt, pepper and Parsley, to taste


Directions:
In a bowl, combine the steak, soy sauce, and olive oil. Set aside and let marinade.


Melt 1 Tbsp butter and 1 Tbsp olive oil in a cast-iron skillet over medium heat. Take the potatoes and wash them, dry them and then quarter them.


Add the quartered potatoes to the hot oil and cook for 13-15 minutes, stirring frequently. Remove from skillet and set aside.


Add in the remaining butter to the skillet along with garlic and italian seasoning. Stir in steak cubes. The original recipe said to cook for 2 minutes per side but I probably kept them in the skillet for 8 minutes before adding the potatoes back in. Cook for one extra minute, add salt, pepper and parsley and serve.
